Coffee Brewing

There are numerous options for brewing coffee at home, but for retail applications options are limited. Most businesses use the typical Bunn style automatic drip machine. In order to achieve the best taste possible on your equipment, consider these guidelines:

  • The temperature of the brewing water should be between 195 and 205 degrees F as it comes it contact with the grounds. Water that is too hot will scald the coffee and create bitter flavors in the cup. Water that is too cold will under-extract the coffee and create a weak and flavorless cup. Most brewers have a temperature adjustment, refer to the manual.
  • The coffee should be ground just before brewing. It is tempting to pre-grind coffee into filters, but ground coffee looses its flavor almost immediately. Use approximately two tablespoons of coffee for every 6 ounces of water.
  • It is best to hold brewed coffee in a thermal airpot rather than on a heating element. The heat cooks the coffee and can cause flavor to degrade in minutes. Brewed coffee stored in an airpot stays fresh for about one hour.
